Trilogy Estates Vineyard is a small-batch bakery and grocery house on County Road 225. We make bread, pastries, and curated provisions the way they used to — slowly, carefully, and without compromise.
Trilogy Estates Vineyard wasn't founded on a trend. It was founded on a simple conviction: that bread, pastries, and pantry staples deserve the same attention to craft that a vineyard receives. Three disciplines, one standard.
Located on County Road 225 in Florence, Texas, we operate as a bakery, a grocery curator, and a provision house under one roof. Everything we bake is made in-house, every morning. Everything we stock is chosen for quality, provenance, and taste — not margin.
We don't carry everything. We carry what works — and we know the difference. From morning loaves to evening pantry essentials, every product meets a standard we'd put our name on.
Wild-fermented loaves baked daily. Our sourdough starts from a starter we've tended for years — no shortcuts, no improvers, just flour, water, salt, and time.
Croissants, danishes, and tartes crafted with European-style butter. Laminated by hand, layered with patience, baked until golden.
Oils, vinegars, flours, preserves, and specialty items chosen for quality and origin. If we wouldn't use it in our own kitchen, we won't sell it.
What the season gives us, we feature. Local honey, regional cheeses, farm eggs, and whatever else moves through our door with integrity.
Events, gatherings, or a specific request — we accept advance orders for breads, pastries, and provisions tailored to what you need.
Three rules: real ingredients, real process, real accountability. If a product doesn't meet all three, it doesn't meet any.
We call it Trilogy for a reason. Three commitments that reinforce each other — and raise the bar on every product we offer.
We start with what matters: flour milled fresh, butter from known dairies, fruit at peak ripeness, salt that actually tastes like something. If the ingredient isn't worth building a product around, we don't build it.
Good food can't be rushed. Sourdough ferments on its own schedule. Dough rests when it needs to rest. We follow the process, not the clock. That's how you get flavor that takes up space.
Every loaf, every pastry, every stocked item carries our name. We'd stake our reputation on it — which means we only put our name on things we'd serve our own table. No compromises, no filler.
"We don't make food to fill shelves. We make food to earn the right to be eaten."
